  • Prepare Ingredients: Chop 500g ripe tomatoes, 1 medium onion, and 1 small carrot (optional).
  •  Sauté Aromatics: Heat 1 tbsp oil or butter, add 1 bay leaf, 2 garlic cloves, and onions. Fry until slightly roasted.
  • Cook Tomatoes: Add tomatoes, salt, and basil (optional). Cook until soft and mushy. Discard bay leaf and basil.

  • Gather spices: 1 bay leaf, 1 tsp garam masala, ½ tsp turmeric, ½ tsp black pepper, and salt to taste. Keep ½ tsp sugar and 1 tbsp oil ready.
  • Sauté Aromatics: Heat oil in a pressure cooker. Add ginger, garlic, and bay leaf. Sauté for a minute, then add onions and green chilli. Cook until onions are soft.
  • Cook the Paya: Add the cleaned paya, garam masala, turmeric, black pepper, salt, and sugar to the cooker. Mix well. Pour in 4 cups of water, stir, and seal the pressure cooker.
  • Pressure Cook: Cook on high flame for 1 whistle, then reduce the heat and cook on low flame for 20 minutes or until tender.

  • Temper: Heat oil, splutter mustard, cumin, red chilli, hing, and curry leaves.
