Thinking of cooking up Chinese in your kitchen? There are many versions of this dish and a variety of vegetables can be used while cooking up this Asian delight. We bring a quick friend rice recipe which can be cooked in a jiffy and will make you not want to go out for Chinese anymore!

Veg Fried Rice Recipe

Veg Fried Rice made easy. Goodbye Chinese takeout!
  • Fortune Super Basmati Rice (1 cup)
  • Small carrot, peeled and sliced into thin sticks (1)
  • Baby corns, peeled and sliced (1)
  • Green bell pepper, finely chopped (simla mirch) (¼)
  • Cabbage, finely chopped (¼ cup)
  • French beans, finely chopped (¼ cup)
  • Spring onion whites (¼ cup)
  • Celery, finely chopped (2 tbsp)
  • Ginger-garlic, crushed (½ tsp)
  • Spring onion greens, finely chopped (cup)
  • Soy sauce (1½ tsp)
  • Chilli sauce (1 tsp)
  • Green chillies, slit (2)
  • Pepper powder (½ tsp)
  • Sugar (½ tsp)
  • Vinegar (1 tbsp)
  • Fortune Oil (3 tbsp)
  • Soak rice in water for 30 mins. Then, rinse and pressure cook it. Keep in mind that 2 cups water should be used for 1-cup rice. Pressure cook until the rice is cooked (2-3 whistles). Once done, fluff the rice gently using a fork and add in 4-6 drops of oil. Mix gently and leave it to cool.
  • While the rice is cooling, start up the prep work! Make sure to use fresh tender veggies for this fried rice. You can peel and chop the carrots into thin sticks and baby corns into rounds or sticks. Also, finely chop the purple cabbage, capsicum and fresh beans. Chop the spring onion greens and whites separately.
  • Taker a wok or heavy bottomed kadai and heat 3 tbsp of oil. Next, sauté crushed ginger garlic for 2-3 mins. Throw in the slit green chillies and sauté for another minute or 2.
  • Next, add in the spring onion whites and continue to sauté for about 3-4 mins on a high flame.
  • Now, throw in all the veggies, mix well and sauté for 3-4 mins.
  • Time for the sauces. Add soy sauce and chilli sauce along with pepper powder, salt, sugar and mix well. Fry for a few more minutes.
  • Now add in the cooled rice and toss everything together. Vinegar is up next! Make sure to mix well.
  • All done? Garnish with spring onion greens and dig into this Chinese delicacy.
