Gajar ka Halwa

A must-have winter dessert, Gajar ka Halwa!
Ingredients
  • Thickly grated carrot (2 cups)
  • Clarified butter (ghee) (1 tbsp)
  • Milk (2 tbsp)
  • Sugar (4 tbsp)
  • Thick condensed milk (mava/khoya) (4 tbsp)
  • Raisins (kismis) (1 tbsp)
  • Chopped almonds (1 tbsp)
  • Cardamom (elaichi) powder (1/2 tsp)
Method
  • Let’s begin preparing this traditional dessert by first heating ghee in a pressure cooker. Then, add carrots and sauté for about 4-5 mins on a medium flame. Don’t forget to keep stirring continuously.
  • Next up, add in the milk and mix well.
  • Now, let it pressure cook for 1 whistle while allowing steam to escape. Don’t open the lid yet.
  • Take a broad non-stick pan and transfer. Add in sugar and then mix. Let it cook on a high flame for 5–7 mins while stirring continuously.
  • Time to mix in the mawa and cook for a minute or two while stirring continuously.
  • Once done, bring in the raisins, almonds and cardamom powder. Cook for another a minute.
  • Your delicious halwa is ready to be served! Serve it hot with a generous scoop pf vanilla ice cream.
