What goes into making Soya Mini Chunks Salad?

  • 1 Cup Water 
  • 1 Cup Soya Mini Chunks
  • 2 Tbsp Olive Oil
  • 1 Tbsp Chopped Garlic
  • 1 Tbsp Red Chilli Powder 
  • 1 Green Chilli (Chopped)
  • 1 Tbsp Pepper 
  • Salt (To Taste) 
  • 1 Lemon (Juiced)
  • 1 Cucumber (Diced)
  • 1 Tomato (Diced)
  • ½ Red Onion (Finely sliced)
  • ½ Cup Cooked Corn Kernels
  • ¼ Cup Coriander Leaves (Chopped)
  • ¼ Cup Mint Leaves (Chopped)
  • ¼ Cup Crumbled Feta Cheese OR ¼ Cup Paneer

How to make Soya Salad?

Add the soya mini chunks to a pot of hot water and bring it to a boil. Let it simmer for 5-7 minutes.

Drain the water from the pot and rinse the soya chunks with cold water to stop the cooking process. Squeeze the rest of the water out of the chunks and set them aside to cool completely.

Heat olive oil in a pan and saute garlic until fragrant. Mix in soya chunks and red chilli powder.  

Make the dressing in a separate bowl by whisking together olive oil, salt, pepper, lemon juice and chopped green chilli.

Take a large bowl and add in the vegetables, prepared soya chunks and herbs to a bowl. You can add the feta cheese or paneer to this step.

Pour the prepared salad dressing into the salad and gently toss everything together until the ingredients are coated. 

You can serve the Soya Chunks Salad as it is or toast sesame seeds lightly and sprinkle over your salad right before serving.
