How to make Soya Momos?
Boil water with salt and whole spices. Add the soya chunks and let it boil for 5-6 minutes. Soak the chunks in cool water and squeeze the excess water out.
Grind the soya chunks into granules in a blender. Set aside for later.
Heat oil in a pan. Saute ginger, garlic and green chilli until fragrant.
Add cabbage, carrot, bell pepper, and spring onions to the pan and cook for a few minutes. You can add salt to this step to your taste.
Now, add the grounded soya chunks and stir well. Let this cook for 2-3 minutes. Add black pepper powder for a touch of spice and mix well.
In another bowl, start by kneading together the refined flour and water as needed to make a dough.
Make balls of the kneaded dough and start rolling them out into small circles.
Add one spoonful of the soya momos filling and press the edges of the rolled dough to seal the momos tightly.
Once your momos are prepped and ready to be steamed, heat water in a pan and place the steamer inside. Place the momos gently with even spacing to prevent them from sticking to each other, and steam for 5-7 minutes.
Serve your Soya Momos hot with some momo chutney and soya sauce on the side!
