What goes into making Soya Chilli?

  • 1 Cup Water 
  • 1 Cup Soya Chunks
  • 2 Tbsp Soya Sauce
  • Corn Flour (1 small cup for coating + 2 Tbsp for gravy)
  • 2 Tbsp Paprika/Red Chilli Powder 
  • 1 Tbsp Black Pepper Powder 
  • Soya Oil (frying)
  • 2 Inch Ginger (Chopped)
  • 8 Garlic Cloves (Chopped)
  • 6 Green Chilli 
  • 1 Cup French Beans 
  • 1 Onion 
  • 1 Red Capsicum 
  • 1 Yellow Capsicum 
  • 1 Green Capsicum 
  • 1 Carrot 
  • 1 Cup Cabbage 
  • 3 Tbsp Spring Onion 
  • 3 Tbsp Tomato Sauce 
  • 1 Tsp Sugar 
  • Salt (To taste)

How to make Soya Chilli?

Prep the soya by boiling your Soya Chunks in water with some salt. You can add 1 tbsp of Soya Sauce while preparing the chunks for added flavour. 

Soak the chunks in regular temperature water and then drain the excess water out of the chunks.

Toss the drained soya chunks with cornflour, paprika/red chilli powder, and pepper powder.

Heat soya oil in a non-stick pan. Add the marinated soya chunks and fry for 2 minutes until slightly golden. Remove them from the heat and set them aside for later.

Heat oil in another pan. Add the chopped garlic, ginger and green chillies, and sauté for a minute until it releases its fragrance.

Add in your vegetables and saute with soy sauce, tomato sauce, sugar and salt. Mix well. You can add water to this step to adjust the consistency.

In a small bowl, mix a tablespoon of cornflour with a little water to make a slurry. Gradually add this slurry to the pan with the sauce, stirring constantly. Keep adding small amounts of water and stirring until the sauce thickens.

Add the fried soya chunks back to the pan and mix everything together. Cook for an additional 1-2 minutes to heat everything through.

Garnish with the chopped green parts of the spring onions and serve this Soya Chilli hot with rice or noodles.
