How to make Soya Bhurji?
Prep the Soya by boiling 1 cup of water with salt. Once it boils, add Soya Granules and boil for 5-6 minutes. Soak the granules in water and then squeeze the excess water. Set aside.
In a bowl, mix together curd, roasted besan, Kashmiri red chilli powder, coriander powder, cumin powder, turmeric powder, garam masala, chaat masala and kasuri methi. Set aside.
Heat oil in a pan and add finely cumin, chopped ginger and two green chillies.
Add sliced onions. Sauté them for 3-4 minutes until the onions turn light golden brown.
Add sliced tomatoes along with salt. Cook on medium heat for 4-5 minutes, or until the tomatoes soften and become mushy.
Now, add the prepared spice and curd masala along with some water to the pan. Cook over medium heat for another 4-5 minutes.
Add the cooked Soya granules and simmer for an additional 3-4 minutes. Serve the hot Soya Bhurji with Pav or Bread.
