How to make Soya Bhorta?
Boil water with salt and add the soya chunks. Boil for 5-6 minutes.
Soak the chunks in cool water and then squeeze out the excess water. Grind the drained soya chunks into until minced.
Heat mustard oil in a pan and toast the red chilli until lightly browned. Take them out of the pan and set aside.
Repeat Step 3 for green chillies and garlic separately and set aside.
Add the red chilli, green chilli and garlic to a small bowl and mash them together with salt.
Add two more tablespoons of mustard oil to the pan and saute onions until browned.
Add in the tomatoes and cook until mushy.
Once cooked, add in the ground soya chunks, mashed potatoes, the prepared chilli garlic mix and turmeric. Cook for 2-3 minutes.
Add finely chopped coriander and take the pan off the flame.
Once cool to touch, make small balls of the mixture for Soya Bhorta. Serve with hot rice or phulka.
