Amritsari Chole Aur Vegetable Pulao Recipe
    • 35gm Chhole (White Chickpeas)
    • 15gm Green peas
    • 15gm Carrot cubed
    • 15gm French Beans cubed
    • 15gm Broccoli cubed
    • 15gm Cauliflower cubed
    • 10ml Fortune Oil
    • ½ Onion chopped
    • 1 Tomato chopped
    • 1 Green chilli slit
    • 1-2gm Ginger julienned
    • ½tsp Coriander powder
    • ½tsp Red chilli powder
    • 1½tbsp Chhole masala
    • 100gm of boiled Basmati Rice
    • ¼tsp Kasuri methi
    • ¼tsp Chaat masala
    • ¼tsp Garam masala
    • Salt to taste
    • To garnish Coriander chopped, Ginger julienned
Method of preparation
    • Soak the Chhole or white chickpeas overnight, cook in a pressure cooker with some salt for 4-6 whistles and keep aside.
    • Heat some oil in a pan and fry the onions till golden brown.
    • Add the coriander powder, chilli powder & Chhole masala.
    • Roast the masala for 2 min on a low flame.
    • Add the tomato, green chilly & ginger.
    • Add the vegetables and saute along with Chhole & rice, cook out.
    • Add chaat masala & kasuri methi for added flavour.
    • Serve hot, garnish with coriander leaves.
