Tandoori Chicken Bites with Mint Yogurt Dip

Ingredients


    For dip

    • 1 cup washed and cleaned mint leaves
    • 1/2 cup washed and cleaned coriander leaves
    • 2 cloves garlic
    • 1 tbsp lemon juice
    • 2 green chillies
    • Salt
    • 1 tsp roasted cumin powder
    • 1 cup yogurt, whisked


    For chicken bites

    • 1 cup bite-sized boneless chicken pieces
    • 1/2 cup yogurt
    • 1/2 tbsp ginger-garlic paste
    • 1 tbsp tandoori masala
    • 1/2 tsp turmeric powder
    • 1/2 tbsp red chili powder
    • 1/2 tbsp salt
    • 2 tbsp Fortune Rice Bran Health oil
    • 1 tbsp lemon juice
Method of preparation
    • Prepare the dip by grinding all the ingredients in a mixer jar except the yogurt. Whisk this into the yogurt and keep refrigerated.
    • Wash chicken pieces thoroughly with enough water and place them in a strainer.
    • In a bowl, whisk yogurt and mix in ginger-garlic paste, tandoori masala, turmeric powder, red chili powder and salt.
    • Now gently toss the chicken pieces in this mix and coat them with the masala.
    • Leave the marinated chicken pieces in the fridge for 1-3 hours.
    • Preheat the oven to 200°C and brush the baking tray with Fortune Rice Bran Health oil. Place the marinated chicken pieces on the prepared baking tray leaving gap in between the pieces. Bake for 15 minutes by covering with a foil.
    • After 15 minutes, remove the baking tray and turn each piece and bake for another 10-15 minutes by drizzling another spoon of oil over the top.
    • Sprinkle lemon juice and serve warm with mint-yogurt dip.
